The grand railway hotel above Waverley Station, opened in 1902 as the North British Station Hotel and now Rocco Forte's Edinburgh flagship, with 167 rooms and 20 suites. Its clock tower anchors the east end of Princes Street and is famously set three minutes fast, a tradition from the railway era to help passengers catch their trains. Inside: Number One restaurant holding four AA Rosettes, the SCOTCH bar with over 500 Scottish whiskies, and the suite where J.K. Rowling finished the final Harry Potter book in 2007, now trading on the fact. As central as Edinburgh gets, and priced accordingly.
