The Edinburgh outpost of the Bombay-cafe group, on St Andrew Square, and the rare chain locals defend: this branch is themed around Patrick Geddes, the Scottish botanist and town planner who worked in both Edinburgh and India. Bacon naan rolls at breakfast, black daal all day, and a queue system that is part of the culture: tables can be booked online before 6pm, after which smaller groups queue walk-in, with complimentary chai passed down the line. Peak-time waits of thirty to sixty minutes are normal and the queue moves faster than it looks.
