The Dough Bros started life as a street-food truck in 2013 and graduated to a permanent spot in the Cathedral Buildings on Middle Street. The pizza is Neapolitan and wood-fired, built on a 72-hour dough and finished with local-produce toppings, and it turns up on best-pizza-in-Ireland lists with tedious regularity. It is counter-service and busy, so expect to wait at peak times. Worth it.
