StockHouse has been Trim's default booking for a proper sit-down dinner for years, and it sits on the corner where Emmet Street meets Finnegan's Way, a couple of minutes' walk up from the castle. It is a steakhouse first: Irish beef aged in house, sauces and sides made rather than bought in, and a bar list that runs to craft beer and cocktails alongside the wine. The room is dark booths and leather, which suits a Saturday night better than a quick lunch, and the kitchen does not open until the late afternoon on most days. It is closed on Tuesdays, which catches people out, and on a Púca or Royal Meath Show weekend it is worth ringing days rather than hours ahead.
