Flambé took over the French's Lane premises that Trim knew for years as Franzini's, which is still how a fair number of locals give directions to it. The site is the good one: a short walk over the bridge from the castle, close enough that a window table looks out at the curtain wall. The kitchen runs Italian and European, wood-fired pizza alongside longer-cooked plates, and it keeps restaurant hours rather than cafe ones, opening from Wednesday evening through Sunday. Booking goes through OpenTable rather than the restaurant's own system, and on a fine Saturday in summer the outside tables go first.
