Be clear on the geography before you book: Ballymaloe House is not in Midleton. It is at Shanagarry, out past Cloyne, and the owners' own directions put the entrance about 3km beyond Cloyne village on the Shanagarry and Ballycotton road, which works out at roughly 12km southeast of Midleton by road. You will need a car; there is no rail and no useful bus. What it is, is the country house that more or less invented modern Irish country-house cooking: 32 individually furnished rooms on a 300-acre farm, a dining room working off that farm's produce, and a family that has been running it as a hotel since it stopped being simply their home. It is expensive and it is worth understanding that the Cookery School nearby is a separate operation on a separate site, not part of the hotel stay.
