D'Vine opened on Dyer Street in 2006 and has been the town's default good-night-out restaurant ever since. The building is Distillery House, a Georgian townhouse with the dining rooms below and around it, and the cooking is Mediterranean in the loose Irish sense: tapas plates to share, flame-grilled Irish beef, pasta, a cauliflower steak that is not an afterthought, and a wine list that is the actual point rather than an add-on. Prices sit where you would expect for the town's best-known restaurant, with steaks in the high thirties to low forties and most plates well below that. Book online through their own reservations page; the room fills on Friday and Saturday and last bookings are earlier than you might assume.
