About

A Michelin-starred pub restaurant on the marshes at Seasalter, a couple of miles west of Whitstable town centre, run by chef Stephen Harris and family since November 1999 and holding its Michelin star since 2008. The kitchen cooks almost entirely from what the immediate area provides: oysters and fish from the Thames Estuary behind the building, meat, vegetables and game from the marshland and fertile soils in front, plus fruit and vegetables grown in the pub's own kitchen garden and polytunnels. The site itself has served as an inn since at least 1642, and the Domesday Book recorded Seasalter in 1086 as belonging to the kitchens of Canterbury Cathedral, a food-producing history the current kitchen leans into deliberately.
