Stanmer Park is a large green space on the edge of Brighton with woodland, an old walled garden, a Georgian house, and open parkland that backs onto the South Downs National Park. It suits families well since there is space to run around, a farm nearby, and gentle waymarked walks that do not demand any real fitness. It is easily reached by bus from the centre and makes a good half-day out if the seafront feels too crowded or too commercial. The walled garden and church add a bit of history if you want more than just open grass and trees.
