The Salt Room sits directly on the seafront below King's Road, with a dining room looking out over the Channel and a terrace for warmer days. The kitchen is built around a Josper charcoal grill, so whole fish, shellfish, and specialty cuts of meat are all cooked over embers, alongside a serious oyster and shellfish counter. It reopened after a refit with a slightly more relaxed layout but the same focus on quality seafood and sea views. Booking is recommended, especially for terrace tables at weekends, and prices sit at the top end for Brighton dining.
