An Tairseach is a seventy-acre organic farm and ecology centre on Kilmantin Hill, run by the Dominican Sisters and certified organic since 2006, and its farm shop sits about five minutes' walk uphill from Market Square, on the same hill as the gaol. It sells its own vegetables and fruit, pork and beef raised on the farm, honey from its own eight hives, and a short list of organic pantry goods and eco cleaning products, with weekly vegetable boxes in two sizes and click and collect. There are also nature trails through the farm's conservation areas and a year-round programme of ecology workshops and retreats. It is the most genuinely local food you can buy inside the town boundary.
