Whiskey came back to Enniskerry in 2018, when the estate's old mill house, a heritage building dating to the 1730s, was converted into a working distillery. It makes Fercullen Irish whiskey, named for the old territory around here, and the visitor offer is a straightforward hour on the distillery floor and through the warehouse, finishing with three Fercullen whiskeys tasted properly rather than sipped in a corridor. There is a longer version with food pairings, and private tastings by arrangement. Being on the estate rather than in the village, it pairs naturally with the gardens, and unlike almost everything else in Enniskerry it is entirely indoors, which makes it the obvious wet-afternoon move.
