A carbon-neutral microdistillery on St Michael's Hill near the university, producing small-batch spirits by single-shot distillation: Woden gin, an Old Tom, limited seasonal gins, Britain's first Aquavit, a Parisian-style absinthe and a single-origin coffee digestif. The distillery runs weekly gin-making workshops and masterclasses where visitors distil their own bottle or taste through the range with guided history, alongside a small shop and bar with its own limited opening hours.
