The restored windmills and watermill do not just turn for show: they mill flour on site, as the monastery mills here have done in one form or another since the Middle Ages. The stoneground wholemeal flour is sold at the mill and at the Saturday farmers market in the courtyard, about as short a supply chain as flour gets. The mill complex also runs the weekly market that gathers the rest of north Fingal's small producers under the sails.
