Aniar is chef-patron JP McMahon's terroir-driven flagship on Lower Dominick Street, and it holds a Michelin star. The tasting menu is built almost entirely around west-of-Ireland produce, foraged, farmed and landed within reach of the city, and it changes with what the land and sea are giving. There is a cookery school attached, so the place runs on a genuine teaching ethos as well as a serving one. Closed Sunday and Monday, and you book direct well ahead.
