About

Cashel Blue is Ireland's original farmhouse blue cheese, made by the Grubb family at Beechmount Farm near Fethard, about 14km from Cashel town, since the 1980s. The dairy also makes Crozier Blue from sheep's milk. The cheese is named for the town and is the signature food of the Golden Vale, sold in cheesemongers and good shops across Ireland and on the cheeseboards of the Cashel restaurants. Note the farm is at Fethard, not in Cashel itself; this is a nearby producer carrying the Cashel name.
