Out of the Blue is the seafood room Dingle is best known for, a small blue-painted building right on the harbour front that has cooked nothing but fish since 2001. The ethos is strict: if the boats do not land it, it is not on the menu, so there is no meat option and no frozen back-up, and on a day when the catch does not come in the kitchen simply closes. The board changes daily with whatever was landed, the cooking is unfussy and confident, and booking ahead is essential because the room is small and its reputation is not. This is the place locals send you for the genuine article.
